Spicy Plum Chicken Nachos

INGREDIENTS

  • 1 bottle FruitLips Spicy Plum Braai Sauce
  • 400g chicken breast
  • Salt and pepper to taste
  • 2 corn on the cob (roasted in a dry pan until slightly charred)
  • 250g nacho chips
  • 2 cups grated cheese
  • ½ yellow pepper sliced
  • ½ red pepper sliced
  • Wild rocket for garnish
  • Guacamole & sour cream on the side

METHOD

Preheat over to 180 degrees on grill setting

Line a large rimmed baking sheet with foil

In a large pressure cooker combine 200g FruitLips spicy plum braai sauce and chicken breasts, close lid and cook for 30min. Remove from pot and shred the chicken.

Add shredded chicken back into pot and add remaining plum braai sauce to chicken. Let it shimmer for 1-2min.

On a baking sheet, add a layer of the nacho chips. Top evenly with the shredded chicken, sliced peppers, chard corn and grated cheese. Repeat again for second layer of nachos in same baking sheet.

Bake for 5-10min, until cheese is melted and has a golden-brown colour.

Garnish with wild rocket and serve warm.

Serve with guacamole and sour cream on the side.

 

Serves 4-6

PS. Spicy Plum Braai sauce can be replaced with the plain plum braai sauce for people that does not like hot nachos.
